Refrigerator Raisin Cookies

For a beautiful finish, sprinkle the tops of these with turbinado sugar just before baking. Press it into the cookie top gently. It will form a crunchy crust as the cookies bake.

INGREDIENTS | YIELDS 60 COOKIES

  • ½ cup unsalted butter
  • ¼ cup shortening
  • 1½ cups brown sugar
  • 2 eggs
  • 3 cups all-purpose flour
  • ½ teaspoon salt
  • ½ teaspoon baking powder
  • ½ teaspoon nutmeg
  • ½ teaspoon soda
  • 1 cup raisins
  1. Cream together butter and shortening. Beat in sugar until fluffy. Add eggs beat well.

  2. Whisk dry ingredients together; blend into butter mixture. Fold in raisins. Form into logs; wrap in wax paper. Chill or freeze.

  3. When ready to bake, preheat oven to 400°F. Lightly grease baking sheet.

  4. Slice cookie 1/8" thick; place 2" apart on baking sheet.

  5. Bake 8–10 minutes. Cool.
