Refrigerator Raisin Cookies
For a beautiful finish, sprinkle the tops of these with turbinado sugar just before baking. Press it into the cookie top gently. It will form a crunchy crust as the cookies bake.
INGREDIENTS | YIELDS 60 COOKIES
- ½ cup unsalted butter
- ¼ cup shortening
- 1½ cups brown sugar
- 2 eggs
- 3 cups all-purpose flour
- ½ teaspoon salt
- ½ teaspoon baking powder
- ½ teaspoon nutmeg
- ½ teaspoon soda
- 1 cup raisins
Cream together butter and shortening. Beat in sugar until fluffy. Add eggs beat well.
Whisk dry ingredients together; blend into butter mixture. Fold in raisins. Form into logs; wrap in wax paper. Chill or freeze.
When ready to bake, preheat oven to 400°F. Lightly grease baking sheet.
Slice cookie 1/8" thick; place 2" apart on baking sheet.
Bake 8–10 minutes. Cool.
