Peanut Butter Whirligigs

You can easily substitute your favorite jam for the chocolate in these peanut butter cookies with a beautiful swirl. Jelly does not work as well.

INGREDIENTS | YIELDS 36 COOKIES

  • ½ cup shortening
  • ½ cup peanut butter
  • ½ cup brown sugar
  • ½ cup sugar
  • 1 egg
  • 1¼ cups all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 6 ounces of chocolate, chopped and melted
  1. Cream shortening, peanut butter, and sugars until light and fluffy. Beat in egg.

  2. Whisk dry ingredients together; blend into creamed mixture.

  3. Roll dough into ¼" thick rectangle; spread with melted chocolate.

  4. Roll up like a jelly roll; wrap in wax paper. Chill overnight, or freeze.

  5. When ready to bake, preheat oven to 375°F. Slice dough 1/8" thick; place on parchment-lined baking sheet. Bake 10 minutes.
