Peanut Butter Whirligigs
You can easily substitute your favorite jam for the chocolate in these peanut butter cookies with a beautiful swirl. Jelly does not work as well.
INGREDIENTS | YIELDS 36 COOKIES
- ½ cup shortening
- ½ cup peanut butter
- ½ cup brown sugar
- ½ cup sugar
- 1 egg
- 1¼ cups all-purpose flour
- ½ teaspoon baking soda
- ½ teaspoon salt
- 6 ounces of chocolate, chopped and melted
Cream shortening, peanut butter, and sugars until light and fluffy. Beat in egg.
Whisk dry ingredients together; blend into creamed mixture.
Roll dough into ¼" thick rectangle; spread with melted chocolate.
Roll up like a jelly roll; wrap in wax paper. Chill overnight, or freeze.
When ready to bake, preheat oven to 375°F. Slice dough 1/8" thick; place on parchment-lined baking sheet. Bake 10 minutes.
