Date Nut Pinwheels

If you like Fig Newtons, try making these with the fig filling rather than the date filling. These ship very well.

INGREDIENTS | YIELDS 132 COOKIES

  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup unsalted butter
  • 1 cup brown sugar
  • 1 cup sugar
  • 3 eggs
  • 1 teaspoon vanilla
  • 1 tablespoon orange zest
  • Date Filling
  1. Sift together dry ingredients; set aside.

  2. Cream butter and sugars until fluffy. Add eggs one at a time. Add vanilla and orange zest. Blend in flour mixture; chill 1–2 hours.

  3. While dough is chilling, make date filling.

  4. Divide dough into fourths; roll out each into 10" × 6" rectangle, about 1/8" thick.

  5. Spread each rectangle with ¼ of filling; roll up like a jelly roll. Wrap firmly in wax paper; chill overnight, or freeze.

  6. When ready to bake, slice 1/8" thick; place on a parchment-lined baking sheet.

  7. Bake at 350°F 10–12 minutes.

Another Way to Cut Icebox Cookies

Another way to cut the cookie dough cleanly is to use dental floss. Thaw the dough for about five minutes, then slide a piece of dental floss under the cookie log. Hold both ends up above the dough and then cross the ends above the log to create an X. Pull the ends in opposite directions. Slide the floss down the log the desired width (usually 1/8") and repeat.
