Gluten-Free Chocolate Chip Cookies

You can substitute any type of baking chip for the chocolate chips in these cookies. Always read the ingredients to make sure that they are gluten free.

INGREDIENTS | YIELDS 24 COOKIES

  • ¼ cup sugar
  • ½ cup dark brown sugar
  • ½ cup unsalted butter
  • 1½ teaspoons vanilla
  • 1 egg
  • 1 cup white rice flour
  • ¼ cup almond flour
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon guar gum
  • 1 cup chocolate chips
  1. Preheat oven to 350°F. Spray a baking sheet lightly with baking spray.

  2. Process all ingredients except chocolate chips until well blended.

  3. Shape into small, teaspoon-sized cookies. Place on baking sheet.

  4. Bake 6 minutes, or until done.
