Jan Hagels

Jan Hagels (yan HAH-ghle) are a Dutch specialty. These shortbread-like cookies are simple and fast, perfect with tea or hot chocolate on a blustery day.

INGREDIENTS | YIELDS 48 COOKIES

  • 1 cup softened unsalted butter
  • 1 cup sugar
  • 1 teaspoon almond extract
  • 1 egg, separated
  • 2 cups flour
  • ½ teaspoon cinnamon
  • 1 tablespoon sugar
  • ½ cup sliced almonds
  1. Preheat oven to 350°F.

  2. Cream butter and sugar until light and fluffy. Add almond extract and egg yolk. Add flour; blend well.

  3. Press dough firmly into 10" × 15" jelly roll pan.

  4. Beat egg white until foamy; brush over cookie dough. Mix cinnamon, sugar, and almonds; sprinkle over dough.

  5. Bake 20–25 minutes. Cool 5 minutes. Cut into diamond shapes.
