Jan Hagels
Jan Hagels (yan HAH-ghle) are a Dutch specialty. These shortbread-like cookies are simple and fast, perfect with tea or hot chocolate on a blustery day.
INGREDIENTS | YIELDS 48 COOKIES
- 1 cup softened unsalted butter
- 1 cup sugar
- 1 teaspoon almond extract
- 1 egg, separated
- 2 cups flour
- ½ teaspoon cinnamon
- 1 tablespoon sugar
- ½ cup sliced almonds
Preheat oven to 350°F.
Cream butter and sugar until light and fluffy. Add almond extract and egg yolk. Add flour; blend well.
Press dough firmly into 10" × 15" jelly roll pan.
Beat egg white until foamy; brush over cookie dough. Mix cinnamon, sugar, and almonds; sprinkle over dough.
Bake 20–25 minutes. Cool 5 minutes. Cut into diamond shapes.
