Pastel Bunny Cookies
You can leave the dough plain, or separate it and knead in the food coloring by hand for an assortment of colorful spring bunnies.
INGREDIENTS | YIELDS 48 COOKIES
- 1 cup unsalted butter
- ½ cup sugar
- 1 egg
- ½ teaspoon almond extract
- ½ teaspoon rose water
- Assorted food coloring
- 2½ cups all-purpose flour
- Pinch of salt
- Confectioners’ Glaze
Cream butter until light. Add sugar; beat until fluffy.
Add eggs, almond extract, and rose water. If you are going to make cookies all the same color, add a few drops of food coloring.
Blend in flour and salt. Cover and chill overnight.
Preheat oven to 350°F.
Roll dough about an 1/8" thick on a floured surface. Cut with bunny cookie cutter. Bake 8–10 minutes.
Cool. Glaze with tinted confectioners’ glaze, if desired.
