Pastel Bunny Cookies

You can leave the dough plain, or separate it and knead in the food coloring by hand for an assortment of colorful spring bunnies.

INGREDIENTS | YIELDS 48 COOKIES

  • 1 cup unsalted butter
  • ½ cup sugar
  • 1 egg
  • ½ teaspoon almond extract
  • ½ teaspoon rose water
  • Assorted food coloring
  • 2½ cups all-purpose flour
  • Pinch of salt
  • Confectioners’ Glaze
  1. Cream butter until light. Add sugar; beat until fluffy.

  2. Add eggs, almond extract, and rose water. If you are going to make cookies all the same color, add a few drops of food coloring.

  3. Blend in flour and salt. Cover and chill overnight.

  4. Preheat oven to 350°F.

  5. Roll dough about an 1/8" thick on a floured surface. Cut with bunny cookie cutter. Bake 8–10 minutes.

  6. Cool. Glaze with tinted confectioners’ glaze, if desired.
