Cranberry Cookies

Cranberry cookies are a cake type of cookie. They are traditionally made with fresh cranberries, but dried cranberries can be substituted.

INGREDIENTS | YIELDS 48 COOKIES

  • 1 cup unsalted butter
  • 1 cup white sugar
  • ½ cup brown sugar
  • 1 egg
  • 1 teaspoon orange zest, grated
  • 2 tablespoons orange juice
  • 2½ cups all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 2 cups chopped cranberries
  • ¾ cups chopped walnuts
  • ½ teaspoon orange zest, grated
  • 2 tablespoons orange juice
  • 1 tablespoon melted butter
  • 1½ cups confectioners’ sugar
  1. Preheat oven to 375°F.

  2. Cream butter and sugars until fluffy. Add egg, 1 teaspoon of orange zest, and 2 tablespoons orange juice; beat until smooth.

  3. Stir together dry ingredients; add to butter mixture. Beat until well blended. Mix in cranberries and walnuts.

  4. Drop by tablespoons onto baking sheet, about 2" apart. Bake 12–15 minutes, or until edges of cookies are golden. Cool.

  5. Mix orange juice, butter, and confectioners’ sugar until smooth; spread on cooled cookies.
