Pink Lemonade Cookies
For more lemony flavor, you can make a lemon glaze with confectioners’ sugar and some of the thawed lemonade. Just mix until it reaches the right consistency and spread on the cooled cookies.
INGREDIENTS | YIELDS 36 COOKIES
- 1 cup unsalted butter
- 1 cup sugar
- 2 eggs
- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 1 (12-ounce) can frozen pink lemonade, thawed and divided
- A few drops of red food coloring
- Pink-colored sugar
Preheat oven to 375°F. Line a baking sheet with parchment.
Cream butter and sugar until fluffy. Beat in eggs.
Combine flour and baking soda; add to butter mixture. Add ¾ cup of lemonade and a few drops of food coloring if needed to make dough pink.
Drop by rounded teaspoonfuls on baking sheet.
Bake 8–10 minutes, or until done. Brush with more lemonade and sprinkle with sugar.
