Honey Raisin Bars
Wholesome honey raisin bars provide lots of B vitamins and iron. Dried cranberries can be substituted for the raisins if you like.
INGREDIENTS | YIELDS 48 BARS
- ¾ cup unsalted butter
- ½ cup sugar
- ½ cup brown sugar
- 2 eggs
- ½ cup honey
- 1 teaspoon vanilla
- 1 cup all-purpose flour
- ½ cup whole-wheat flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 2 teaspoons cinnamon
- ½ teaspoon freshly grated nutmeg
- ½ teaspoon allspice
- ¼ teaspoon cloves
- ¾ cup quick oats
- 1 cup raisins
- 1 cup walnuts, chopped
- Confectioners’ sugar for rolling
Preheat oven to 375°F. Lightly grease 15" × 10" jelly roll pan.
Cream butter and sugars until light and fluffy. Mix in eggs one at a time. Beat in honey and vanilla.
Whisk flours, baking powder, baking soda, salt, and spices together; gradually add to creamed mixture. Blend well; stir in remaining ingredients.
Spoon evenly in prepared pan; bake 18–20 minutes, or until done.
Cool. Cut into bars and roll in confectioners’ sugar
Wholesome Whole Wheat
Whole-wheat flour is full of B vitamins. It can be substituted for part of the all-purpose flour in most cookie recipes. For every cup of all-purpose flour called for in a recipe, use ¾ cup all-purpose flour and ¼ cup of whole wheat flour. This works especially well for bar cookies.
