Honey Raisin Bars

Wholesome honey raisin bars provide lots of B vitamins and iron. Dried cranberries can be substituted for the raisins if you like.

INGREDIENTS | YIELDS 48 BARS

  • ¾ cup unsalted butter
  • ½ cup sugar
  • ½ cup brown sugar
  • 2 eggs
  • ½ cup honey
  • 1 teaspoon vanilla
  • 1 cup all-purpose flour
  • ½ cup whole-wheat flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 teaspoons cinnamon
  • ½ teaspoon freshly grated nutmeg
  • ½ teaspoon allspice
  • ¼ teaspoon cloves
  • ¾ cup quick oats
  • 1 cup raisins
  • 1 cup walnuts, chopped
  • Confectioners’ sugar for rolling
  1. Preheat oven to 375°F. Lightly grease 15" × 10" jelly roll pan.

  2. Cream butter and sugars until light and fluffy. Mix in eggs one at a time. Beat in honey and vanilla.

  3. Whisk flours, baking powder, baking soda, salt, and spices together; gradually add to creamed mixture. Blend well; stir in remaining ingredients.

  4. Spoon evenly in prepared pan; bake 18–20 minutes, or until done.

  5. Cool. Cut into bars and roll in confectioners’ sugar

Wholesome Whole Wheat

Whole-wheat flour is full of B vitamins. It can be substituted for part of the all-purpose flour in most cookie recipes. For every cup of all-purpose flour called for in a recipe, use ¾ cup all-purpose flour and ¼ cup of whole wheat flour. This works especially well for bar cookies.
