Simple Eggs Benedict

1 Basic Poached Egg (page 15)

1 English muffin

1 tablespoon (or to taste) butter or margarine

2 tablespoons plain yogurt

1 teaspoon prepared mustard

Split the English muffin in half, toast, and butter both halves. Mix together the yogurt and mustard. Spread the yogurt and mustard mixture on 1 muffin half, and place the poached egg on the other half.

Serves 1
