Glazed Pecans
Pecans are rich in minerals such as zinc and heart-healthy monounsaturated fat. Use leftover glazed pecans as a salad topping, snack, or to lend flavor to main dishes.
INGREDIENTS | YIELDS 1 cup
- 2 tablespoons margarine
- ¼ cup brown sugar
- 2 tablespoons corn syrup
- 1 teaspoon ground cinnamon
- 1 cup pecans
Melt the margarine over low heat in a small saucepan. Add the brown sugar, corn syrup, and ground cinnamon. Add the pecans, stirring to coat in the mixture.
Increase heat to medium and bring to a boil, stirring to dissolve the brown sugar. Let the mixture boil for several minutes.
Pour the pecan mixture onto a greased baking sheet and cool. Separate the mixture and store in an airtight container or plastic bag. (They will last for about 1 week.)
