Fruity Snow Peas

6 ounces fresh snow peas

½ cup canned fruit cocktail juice

  • Rinse the snow peas under cold, running water. Drain and pat dry. Trim the ends.

  • Place the snow peas in a shallow, microwave-safe bowl and add the fruit cocktail juice. Cook on high heat for 1½ to 2 minutes or until the snow peas are crisp and bright green.

Are Your Dishes Microwave Safe?

There is an easy way to find out. Fill the dish with water and microwave on high heat. If the water heats up and the dish remains room temperature, it is safe to use.

Serves 2–3

Canned fruit cocktail juice adds a sweet flavor to delicate snow peas. It would make a nice side dish to accompany tart Lemony Chicken (page 167).
