Cheese Fondue

Cut the garlic clove in half. Rub it over the insides of a 2-quart microwave-safe casserole dish.
Add the cheese to the casserole dish and stir in the cornstarch and nutmeg. Add the apple juice and mix thoroughly.
Place the casserole dish in the microwave and microwave on high heat for 3 minutes. Stir, and microwave for 3 more minutes in 30-second intervals, stirring each time. Serve in a warmed fondue pot or in the casserole dish. (Serving in the casserole dish will make it easier to reheat if necessary.) Serve with the breadsticks for dipping.

The trick to this recipe is to stir the cheese frequently so that it doesn't burn. If the fondue is too thick, add a bit more apple juice. If it is too thin, stir in extra cornstarch.
