Poached Leftover Meatballs

2 cups beef broth

6 leftover uncooked Caribbean Meatballs (page 182)

Bring the beef broth to boil in a medium-sized saucepan. Add the meatballs and simmer for 8 to 10 minutes until cooked through. Drain and serve.

Basic Béchamel Sauce

Don't let the fancy name throw you. Béchamel Sauce — also known as white sauce — is easy to make. The trick is to cook the butter and flour on low heat for at least 3 minutes, stirring constantly. This prevents the flour from imparting a starchy taste into the sauce.

Don't feel like getting out the roasting pan? Poaching meatballs in beef broth is easy and takes mere minutes. Just make sure to use enough broth to cover the meatballs.
