Pan-Fried Coleslaw

1 teaspoon vegetable oil

1 cup Coleslaw for a Crowd (page 188)

1 tablespoon soy sauce, optional

Heat the vegetable oil in a frying pan over medium heat. Add the coleslaw. Cook for 1 to 2 minutes, stirring until the coleslaw is heated through. Stir in the soy sauce if using, and serve.

Make-Ahead White Sauce

While white sauce takes mere minutes to make, after a long day of classes the thought of standing over a hot stove stirring and whisking can seem overwhelming. Fortunately, white sauce can be prepared ahead of time. Refrigerate in a sealed container for 2 to 3 days, or freeze for up to 3 months.
