Almond Fruit Cocktail Float

2 tablespoons unflavored gelatin, such as Knox

1½ cups water

½ cup boiling water

2 cups evaporated milk

½ cup granulated sugar

1 tablespoon almond extract

1 (15-ounce) can fruit cocktail

  • In a medium-sized bowl, add the gelatin to ½ cup of the water and let it sit for 2 to 3 minutes to soften. Pour the ½ cup boiling water over the soaked gelatin and stir until dissolved.

  • Stir in the remaining 1 cup of water, the milk, sugar, and almond extract. Pour into a 9″ × 9″ pan. Chill in the refrigerator until firm.

  • To serve, cut the chilled gelatin into 1-inch squares and serve in individual serving bowls with the fruit cocktail over the top.

Serves 6–8

For a fancier presentation, cut the chilled gelatin into diamond shapes. Pour the fruit cocktail and juice into a large serving bowl and carefully add the gelatin.
