Jazzed-Up Chicken Sandwiches

2 tablespoons honey mustard

1 tablespoon mayonnaise

½ teaspoon soy sauce

½ teaspoon granulated sugar

2 teaspoons finely chopped red onion

2 tablespoons finely chopped red bell pepper

Pinch (or to taste) mild curry powder

½ cup chopped cooked chicken breast

2 pita pocket halves

  • Mix together the honey mustard, mayonnaise, soy sauce, sugar, onion, red pepper, and curry powder. Add the chicken breast and mix thoroughly. Refrigerate in a sealed container for 2 hours before using.

  • Fill each pita half with an equal amount of filling, and serve.

Yields 2 sandwiches

Feel free to load the sandwich with a chopped lettuce leaf, extra celery, or any of your favorite green salad ingredients.
