Raspberry “Parfait”
In a blender, blend together the soft tofu, lime juice, and sugar. Add the frozen fruit and process again. Pour into 2 parfait or tall drinking glasses. Serve immediately or freeze.

This is a great choice on those evenings when you don't want to serve anything too heavy for dessert. But if you just can't resist the sweet stuff, top with a few chocolate sprinkles.
