Aloha Grilled Shrimp

1 pound shrimp, peeled and deveined, to make 1½ cups

½ red bell pepper

cup soy sauce

1 tablespoon cooking sherry

2 teaspoons brown sugar

1 cup pineapple chunks, drained

  • Rinse the shrimp by letting them stand in warm salted water for 5 minutes. Pat dry with paper towels.

  • Wash the red pepper, remove the seeds, and cut into small chunks. Combine the soy sauce, cooking sherry, and brown sugar in a small bowl.

  • Preheat grill or oven broiler. Place 3 or 4 shrimp apiece on 2 metal skewers, alternating them with a piece of red pepper and a few slices of pineapple. Brush the sauce over the kebabs. Grill or broil for 5 to 8 minutes, turning occasionally and brushing with more sauce until the shrimp are opaque throughout.

Serves 2

Serve with Raspberry “Parfait” (page 170) for a summery meal that will take your mind off the cold weather outdoors. For best results, cover the shrimp and chill for 2 hours before cooking.
