Cinnamon and Raisin Granola

2 cups rolled oats

2½ tablespoons toasted wheat germ

1 teaspoon ground cinnamon

6 tablespoons apple juice

2 tablespoons canola oil

1 tablespoon butter or margarine, softened

2 tablespoons brown sugar

1 cup raisins

  • Preheat oven to 250°.

  • In a large bowl, mix together the rolled oats and wheat germ. Stir in the ground cinnamon. Stir in the apple juice, canola oil, and margarine, blending thoroughly.

  • Spread out the mixture on a baking sheet. Bake for 15 minutes, stirring regularly. Remove the baking sheet from the oven.

  • Pour the granola back into the mixing bowl. Stir in the brown sugar and raisins. Spread the mixture back onto the baking sheet. Cook for another 15 to 20 minutes or until the granola is golden brown. Let cool. Store in a sealed container.

What Makes Wheat Germ So Great?

Made from the kernel of the wheat berry, wheat germ is a concentrated source of all the nutrients found in wheat, including vitamin E, B vitamins, iron, and potassium.

Yields about 3 cups

This tastes delicious topped with applesauce and heated in the microwave. Be sure to use at least 1 cup of dried fruit (such as raisins) to balance the strong taste of the wheat germ.
