Easy Quiche with Spinach

1½ cups frozen spinach

1 tablespoon butter or margarine

½ cup Bisquick

1 cup milk

2 eggs

Salt, to taste

Black pepper, to taste

¼ teaspoon (or to taste) paprika

cup grated Cheddar cheese

  • Thaw the spinach. Preheat oven to 350°. Grease a 9- or 10-inch pie plate or spray with nonstick cooking spray.

  • Heat the butter or margarine in a frying pan. Cook the thawed spinach over medium-low heat, just enough to cook through. Don't overcook.

  • Whisk together the Bisquick and milk. Whisk in the eggs. Stir in the salt, pepper, and paprika.

  • Lay the thawed spinach on the bottom of the pie plate. Sprinkle the grated cheese on top. Pour the Bisquick, milk, and egg mixture over the top.

  • Bake for 35 to 45 minutes or until a toothpick inserted into the center comes out clean.

Build Up Your Quiche

The recipe for Easy Quiche with Spinach is a basic recipe that can be adjusted according to whatever food you have on hand. For example, try reducing the frozen spinach to 3/4 cup and adding 2 slices bacon, ¼ cup onion, 1 tomato, and 3 sliced mushrooms, all sautéed. Just be sure to keep the filling ingredients (minus the grated cheese) to approximately 1½ cups.

Serves 2–4

To cut down on preparation time, take the frozen spinach out to thaw earlier in the day. Swiss, Monterey jack, or mozzarella cheese can be used in place of Cheddar.
