Cheesy Hash Browns

¼ cup milk

¼ cup chicken broth

¼ teaspoon garlic powder

1¾ cups frozen hash browns

1 cup grated cheese, such as Cheddar or Monterey jack

  • Preheat oven to 350°.

  • Mix together the milk, chicken broth, and garlic powder.

  • Lay the frozen hash browns on the bottom of a deep-sided 9″ × 4″ casserole dish. Pour the milk mixture over the top. Sprinkle with ½ cup of the grated cheese.

  • Bake for 50 minutes. Sprinkle the remaining cheese over and bake for another 5 minutes.

Serves 2

This dish makes either a nutritious side dish or a hearty breakfast. For extra protein, add 3 to 4 slices of cooked ham before sprinkling on the final 1/2 cup of grated cheese.
