Pan-Fried "French" Fries

2 slices bacon

1 baking potato

2 tablespoons olive oil, or more as needed

Salt, to taste

  • Cook the bacon on low heat until crispy. Remove from the frying pan and set aside. Do not clean out the pan.

  • While the bacon is cooking, wash and peel the potato. Cut lengthwise into pieces about ¼ to ½ inch thick.

  • Place the olive oil in a small bowl. Toss the potato slices in the oil.

  • Lay the potato slices in the frying pan, reserving any oil left in the bowl. Cook on medium heat for 10 minutes or until browned on one side. Turn over and add the reserved olive oil. Cook for another 10 minutes or until browned, adding more oil if necessary. Remove the fries and drain on paper towels. Sprinkle with salt before serving. Serve the bacon with the fries, either whole or chopped.

Protein-Packed Potato

The skyrocketing popularity of low-carbohydrate diets has caused potatoes sales to drop recently. That's too bad, because the common spud is really a dieter's friend. Besides being an excellent source of vitamin C and potassium, potatoes are fat-free and low in calories. A medium-sized baked potato contains a mere 100 calories and enough energy to see you through a long afternoon of classes.

Serves 1

If you're not a fan of bacon, heat 2 tablespoons of olive oil in the frying pan before adding the potato slices.
