Ground Beef Stroganoff

16 ounces egg noodles

2 tablespoons butter or margarine

½ red onion, chopped

1 cup canned sliced mushrooms, drained

1¼ pounds ground beef

teaspoon (or to taste) salt

teaspoon (or to taste) black pepper

½ teaspoon (or to taste) dried parsley flakes

½ cup beef broth

¼ cup (or to taste) sour cream

  • Cook the egg noodles according to the package directions. Drain and set aside.

  • Melt the butter or margarine in a frying pan over medium heat. Add the chopped onion and the mushrooms. Sauté until the onion is tender. Remove the onion and mushrooms from the pan.

  • Add the ground beef to the pan. Cook on medium heat until browned. Drain off any excess fat. Stir in the salt, pepper, and dried parsley.

  • Add the onion and mushrooms back to the pan. Add the beef broth. Heat through, and stir in the sour cream. Heat for a few more minutes, and serve over the noodles.

How long can uncooked ground beef be refrigerated? Refrigerate the ground beef immediately after arriving home from the store. Use within 2 days. For longer storage, the meat needs to be frozen.

Serves 4

Noodles are the traditional accompaniment for Beef Stroganoff, but rice can be used instead. Dieters can replace the sour cream with plain nonfat yogurt.
