Basic Cooked Converted Rice

1 cup converted rice

2 cups water

1 tablespoon butter or margarine

In a medium-sized saucepan, bring the rice and water to a boil, uncovered, on medium heat. Let the mixture boil until holes, or “craters,” appear in the rice. Cover tightly, reduce heat to low, and simmer until all the water has evaporated (20 to 25 minutes). Add the butter, fluff up the rice, and serve.

Dry Rice Problems

Find that your rice is turning out dry, even though you're using the same amount of water as usual? Check the date on the bag. Like flour, rice dries out as it ages. Try adding a bit more water during cooking.

Yields 3 cups
