Makes 1 drink
1½ ounces light rum
3 ounces pineapple juice
1 ounce Coco Lopez
Slice of pineapple (peeled and cored)
Put all the ingredients into a blender with some ice. Blend until smooth. Dark rum is yummy in place of the light. Some people like more coconut flavor than pineapple, so play around with the measures. Add half-and-half and vanilla extract to enhance the flavor. Replace the rum with vodka, and this drink is called a Chi Chi.
