Spinach and Ricotta Dip

Serves 12

1 10-ounce package frozen chopped spinach, thawed and drained

½ cup ricotta cheese

1/3 cup mayonnaise

¼ cup chopped green onions

¼ cup sour cream

3 tablespoons lemon juice

2 tablespoons grated onion, including juice

Dash of Worcestershire sauce

Salt and freshly ground black pepper to taste

Chopped parsley for garnish

1. Combine all ingredients but parsley in a food processor and pulse until smooth. Adjust seasoning to taste.

2. Transfer to a bowl and chill thoroughly. Top with chopped parsley.

Fresh-Cut Medley

Set the dip bowl in the middle of a platter and place a spoon in the dip. Garnish the platter with all or some of the following: fresh carrots, celery, cucumber, red peppers, zucchini, broccoli, cauliflower, green onions, pita triangles, toasted bread rounds, crackers, and breadsticks.
