Mexican Roll-Ups

INGREDIENTS | SERVES 6

  • 2 fresh jalapeño chili peppers
  • 1 bunch green onions
  • ½ cup black olives, pitted
  • 16 ounces cream cheese
  • ½ teaspoon garlic salt
  • ½ teaspoon medium-hot red chili powder
  • 6 flour tortillas

Cocktail Complement: Hypnotizing Margarita

  1. Remove the stems and seeds from the jalapeño peppers and chop the peppers into ¼-inch pieces.

  2. Remove the roots from the green onions and chop the onions and stems into ½-inch pieces.

  3. Chop the olives into ¼-inch pieces.

  4. Combine all the ingredients and mix until well blended.

  5. Spread on tortillas. Roll up and serve.

South of the Border Party

Light up a south-of-the-border party with chili pepper lights. Hang the lights around the bar area and lay them around the food area. Inexpensive piñatas can liven up the room too. Miniature piñatas can be found at party stores and would be perfect to use as invitations. Simply put the invitations inside.
