Java Spice Snack Cake
Serves 16
1 cup honey
½ cup strong brewed coffee
1 tablespoon brandy
½ cup reduced-fat egg substitute
2 tablespoons olive oil
½ cup brown sugar, firmly packed
2 cups all-purpose flour
1½ teaspoons baking powder
1½ teaspoons baking soda
½ teaspoon salt
½ teaspoon ground cinnamon
¼ teaspoon ground ginger
1/8 teaspoon ground nutmeg
1/8 teaspoon ground cloves

1. Preheat oven to 325°F. Add the honey, coffee, and brandy to a bowl and mix well. Add the egg substitute, oil, and brown sugar, and beat until combined.
2. Sift together the flour, baking powder, baking soda, salt, and spices, and fold into the mixture. Pour the batter into a 9” x 9” baking dish treated with nonstick cooking spray. Bake for 50 to 60 minutes, or until an inserted toothpick comes out clean. Slice into cubes.
Have Your Cake
Present the Java Spice Snack Cake on a pedestal cake stand with a shot glass of frilled toothpicks in the center. Guests can spear a cake cube at their convenience. If the cake stand doesn't hold all the cubes, simply place it on a platter and arrange the remaining cubes on the platter.
