Green Apple Salsa
INGREDIENTS | SERVES about 30
- 6 large tomatoes
- 3 large, tart green apples
- 1 large Vidalia onion
- 1 large green bell pepper
- 1 large red bell pepper
- 1 small green jalapeño pepper
- 1 5-ounce can tomato paste
- 1½ cups packed brown sugar
- 1½ cups cider vinegar
- ½ teaspoon lime juice
- 2 tablespoons chili powder
- 2 teaspoons mustard seeds
- ½ teaspoon cayenne pepper
- 1 teaspoon salt
- 1 tablespoon V-8
Cocktail Complement: Caramel Appletini
Crush the tomatoes in the bottom of the slow cooker with a wooden spoon.
Peel and chop the apples into ¼-inch pieces.
Peel and chop the onion into ¼-inch pieces.
Remove the stems and seeds from the green, red, and jalapeno peppers; chop into ¼-inch pieces.
Combine all the ingredients in the slow cooker and cook covered on low heat for 8 hours. If the sauce seems too runny, remove the cover for the last hour.

The soil combined with climate makes the onions sweet. Today Georgia sells $90 million worth of Vidalia onions annually.
