Green Apple Salsa

INGREDIENTS | SERVES about 30

  • 6 large tomatoes
  • 3 large, tart green apples
  • 1 large Vidalia onion
  • 1 large green bell pepper
  • 1 large red bell pepper
  • 1 small green jalapeño pepper
  • 1 5-ounce can tomato paste
  • 1½ cups packed brown sugar
  • 1½ cups cider vinegar
  • ½ teaspoon lime juice
  • 2 tablespoons chili powder
  • 2 teaspoons mustard seeds
  • ½ teaspoon cayenne pepper
  • 1 teaspoon salt
  • 1 tablespoon V-8

Cocktail Complement: Caramel Appletini

  1. Crush the tomatoes in the bottom of the slow cooker with a wooden spoon.

  2. Peel and chop the apples into ¼-inch pieces.

  3. Peel and chop the onion into ¼-inch pieces.

  4. Remove the stems and seeds from the green, red, and jalapeno peppers; chop into ¼-inch pieces.

  5. Combine all the ingredients in the slow cooker and cook covered on low heat for 8 hours. If the sauce seems too runny, remove the cover for the last hour.

Vidalia onions are known as the world's sweetest onions. A man named Mose Coleman, who made a fortune on them in the Great Depression, first grew them in Toombs County, Georgia. The soil combined with climate makes the onions sweet. Today Georgia sells $90 million worth of Vidalia onions annually.
