Fried Cauliflower

Serves 6

2 heads cauliflower

½ bunch fresh parsley, chopped

1 whole egg

2 egg whites

¼ cup grated Parmesan cheese

¼ cup olive oil

Fresh-cracked black pepper to taste

1. Cut the cauliflower into bite-size pieces. Chop the parsley.

2. Whisk the whole egg with the egg whites, then add the grated cheese and parsley.

3. Heat the oil to medium-high temperature in a large skillet. When the oil comes to temperature, dip the cauliflower in the egg mixture and drain off excess; place in the hot oil and fry on all sides until light golden brown. Drain on rack covered with paper towels. Season with pepper, and serve.

Flower Power

To add a colorful and yummy twist to this recipe, why not replace half of the cauliflower with broccoli to make fried cauliflower and fried broccoli? This dish would be great at a flower-power party!
