Almond Green Beans
This is a version of the classic Green Beans Amandine. It works very well as a side dish with fish dinners.
INGREDIENTS | SERVES 4
- ¼ cup sliced almonds
- 2 tablespoons butter
- 2 cups green beans, fresh or frozen, cut lengthwise into thin strips with a sharp knife (French-cut)
- 2 tablespoons water
- 1 teaspoon salt
- ¼ teaspoon white pepper
Sauté the almonds in butter until lightly browned. Remove them from the butter and set them aside, leaving the butter in the pan.
Add the green beans and 2 tablespoons water to the pan and sauté until the beans are tender, about 5 minutes.
Add the almonds to the beans.
Sprinkle with salt and white pepper.
Remove from heat.
Green Onion Brushes
Green onion brushes are a festive (and edible) garnish. Decorate a crudités platter, a salad, or a sandwich with them. Slice each green onion lengthwise 4–6 times, all the way to the end of the green part, leaving 1 inch of the white part intact. Soak them in ice water until they curl. Keep them in water in the refrigerator until ready to use.
