Split Pea Soup
Hearty and thick, this soup gets its satisfying ham flavor from a ham bone. If you don't have a ham bone, substitute ¾ cup diced ham. Add diced ham to the soup for the last 15 minutes of cooking time, and either remove it before serving or leave it in for additional taste.
INGREDIENTS | SERVES 6
- 8 cups water
- 2 cups dried split peas
- 1 ham bone
- ½ cup diced carrots
- ¼ cup diced celery
- 1 cup diced onions
- salt to taste
- pepper to taste
Simmer water, split peas, and ham bone for 1 hour.
Add vegetables and simmer for 1 hour more.
Remove ham bone and season with salt and pepper.
Fresh Pea Soup
Cook 2 cups fresh or frozen peas in 4 cups chicken stock for 15 minutes. Purée in blender, return to pan, and add 1 cup heavy cream, 1 teaspoon salt, ½ teaspoon white pepper, and 1 tablespoon chopped fresh mint.
