Beef Stew
Hearty beef stew with chunky potatoes, carrots, and peas is satisfying comfort food that is simple to prepare and contains no “exotic” ingredients to keep you from making it, no matter what your budget.
INGREDIENTS | SERVES 6
- 1 pound stewing beef cubes
- ¾ cup diced onions
- 2 tablespoons olive oil
- ¼ cup flour
- 4 cups beef broth
- ½ cup sliced carrots, cut in ½″ pieces
- 1 potato, peeled and diced
- 1 teaspoon dried thyme
- 1 tablespoon Worcestershire sauce
- ½ cup frozen peas
- salt to taste
- pepper to taste
Brown the beef cubes and onion in olive oil. Dust meat with flour; stir to coat and distribute.
Add beef broth, carrots, potatoes, thyme, and Worcestershire sauce.
Bring liquid to a boil; reduce heat and simmer, covered, for 1½–2 hours, until beef is tender.
Add peas and season with salt and pepper. Cook 10 minutes longer.
Browning Meat
When browning meat for a recipe such as stew, do not flour the meat first, because the idea is to caramelize the natural juices in the meat. To add flour for thickening, sprinkle it over the meat after it has been browned.
