Lemon-Scented Bay Scallops
Tender bay scallops are baked in gratin dishes in this easy and delicious recipe. Serve with Rice Pilaf and Minted Peas.
INGREDIENTS | SERVES 4
- 2 tablespoons butter
- 2 pounds bay scallops
- 2 tablespoons lemon juice
- salt and pepper
- ½ cup dry bread crumbs
- 1 tablespoon grated lemon zest
- 2 tablespoons chopped fresh parsley
Preheat oven to 400°F.
Butter 4 individual gratin dishes with ½ tablespoon butter each.
Arrange ½ pound scallops in each gratin dish, then sprinkle them with lemon juice. Season scallops with salt and pepper.
Combine bread crumbs with lemon zest and parsley; sprinkle scallops with bread-crumb mixture.
Bake gratin dishes in the oven for 12 minutes.
