Lemon-Scented Bay Scallops

Tender bay scallops are baked in gratin dishes in this easy and delicious recipe. Serve with Rice Pilaf and Minted Peas.

INGREDIENTS | SERVES 4

  • 2 tablespoons butter
  • 2 pounds bay scallops
  • 2 tablespoons lemon juice
  • salt and pepper
  • ½ cup dry bread crumbs
  • 1 tablespoon grated lemon zest
  • 2 tablespoons chopped fresh parsley
  1. Preheat oven to 400°F.

  2. Butter 4 individual gratin dishes with ½ tablespoon butter each.

  3. Arrange ½ pound scallops in each gratin dish, then sprinkle them with lemon juice. Season scallops with salt and pepper.

  4. Combine bread crumbs with lemon zest and parsley; sprinkle scallops with bread-crumb mixture.

  5. Bake gratin dishes in the oven for 12 minutes.
