Turkey Gravy

Make this gravy when you don't have turkey drippings from a whole roasted turkey. It is much more flavorful than anything you'll find in a can!

INGREDIENT| SERVES 4

  • 2 turkey wings
  • 2 shallots, peeled
  • 3 cups water
  • ½ cup milk
  • ¼ cup all-purpose flour
  • salt and pepper to taste
  1. Preheat oven to 400ºF. Place the turkey wings in a baking dish that will fit them both; add whole shallots to the pan. Bake for 1 hour, or until juices of turkey wings run clear.

  2. Cover the roasted shallots and turkey wings with 3 cups cold water in a saucepan and heat to a simmer. Reduce heat; simmer for 2 hours. Strain broth; discard wings.

  3. Simmer broth in saucepan and reduce to 1 cup. Put milk and flour in a jar with a lid and shake to make a slurry.

  4. Whisk slurry into simmering broth; cook until gravy thickens, stirring frequently. Season with salt and pepper.
