Mayonnaise

Mayonnaise is extremely easy to make from scratch and has more flavor than premade mayonnaise.

INGREDIENTS | SERVES 8

  • ¼ teaspoon white wine vinegar
  • ½ teaspoon lemon juice
  • 1 egg yolk
  • 1 cup vegetable oil
  • salt and white pepper to taste
  • pinch cayenne pepper
  1. In a bowl, whisk vinegar and lemon juice into the egg yolk.

  2. Whisk oil into egg yolk mixture drop by drop at first, and then in a slow, steady stream until all has been incorporated.

  3. Season with salt, pepper, and cayenne pepper.
