Mayonnaise is extremely easy to make from scratch and has more flavor than premade mayonnaise.
INGREDIENTS | SERVES 8
- ¼ teaspoon white wine vinegar
- ½ teaspoon lemon juice
- 1 egg yolk
- 1 cup vegetable oil
- salt and white pepper to taste
- pinch cayenne pepper
In a bowl, whisk vinegar and lemon juice into the egg yolk.
Whisk oil into egg yolk mixture drop by drop at first, and then in a slow, steady stream until all has been incorporated.
Season with salt, pepper, and cayenne pepper.
