Grilled Chicken Sandwich
The chicken in this recipe can also be sliced and served cold or warm on top of Caesar Salad.
INGREDIENTS | SERVES 2
- 2 boneless, skinless chicken breasts
- 1 clove garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon fresh rosemary, minced
- ¼ teaspoon salt
- ⅛ teaspoon pepper
- 2 tablespoons Quick Aioli
- 2 kaiser rolls or hamburger buns
- 4 lettuce leaves
Marinate chicken in garlic, oil, rosemary, salt, and pepper for at least 1 hour.
Grill marinated chicken on preheated grill or grill pan on both sides until juices run clear.
Put aioli on top of the bun, and grilled chicken and lettuce on the bottom half.
A gyro is a Greek sandwich made with pita bread, lamb, tomatoes, onions, and yogurt-garlic-cucumber sauce (tziziki). The meat for the sandwich is usually cooked on a revolving spit, from which the person preparing the gyro slices the meat to put on the warm pita. The gyro (which means “to turn” in Greek) is named after this spit.
