How to Quarter a Whole Chicken
Place the chicken breast-side up on a clean cutting board.
Cut in half along the breast bone with a sharp knife.
Pull the two halves apart. Break the ribs away from the backbone and finish cutting through the skin and meat with a knife to separate the halves.
Separate the thigh quarter from the breast quarter. Bend to locate the joint. Cut through the body above the joint and on through the joint to separate.
