How to Quarter a Whole Chicken

Place the chicken breast-side up on a clean cutting board.

  • Cut in half along the breast bone with a sharp knife.

  • Pull the two halves apart. Break the ribs away from the backbone and finish cutting through the skin and meat with a knife to separate the halves.

  • Separate the thigh quarter from the breast quarter. Bend to locate the joint. Cut through the body above the joint and on through the joint to separate.
