Chicken Salad

This recipe takes advantage of the rotisserie chicken that is available in grocery stores already cooked for you. Instead of purchasing a chicken, you could also cook your own chicken using the recipe for Oven-Roasted Whole Chicken. Serve on a croissant with lettuce or by itself with carrot sticks.

INGREDIENTS | SERVES 4

  • 1 cold roasted chicken, bones and skin removed
  • 1 cup mayonnaise
  • ¼ cup diced celery
  • ½ cup diced canned artichoke hearts
  • ½ cup chopped walnuts
  • salt and pepper to taste
  1. Dice chicken.

  2. Combine all ingredients and season with salt and pepper.
