Bolognese (Meat Sauce)

This is a tomato-based sauce with ground beef in it. The meaty flavor permeates the sauce because the meat is simmered in it. Serve this sauce on ravioli or spaghetti for a classic pasta meal.

INGREDIENTS | SERVES 4

  • ½ large onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 pound ground beef
  • 1 28-ounce can crushed tomatoes
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • ½ teaspoon pepper
  1. Sauté onions and garlic in olive oil until soft.

  2. Add ground beef to the pan and cook, stirring occasionally, until brown.

  3. Pour in the crushed tomatoes and bring to a simmer.

  4. Stir in the herbs, salt, and pepper, and then simmer uncovered for an hour.

  5. Adjust seasoning with salt and pepper.

Ravioli

Ravioli are usually square pasta pillows stuffed with various fillings. Two perennial favorites are ricotta cheese and ground beef. Other pasta shapes are circles and half-moons, and other fillings can be pumpkin, spinach, prosciutto, and even raw egg yolks.
