Quick Paella

A quicker version of the traditional Spanish rice dish, which is made with saffron, peas, chicken, chorizo (spicy pork sausage), and shellfish. Dress up this recipe by adding cooked lobster claws and crab legs at the end.

INGREDIENTS | SERVES 6

  • 1 recipe Chicken with Rice
  • 1 cup frozen peas
  • 1 smoked sausage, sliced
  • ½ cup calamari, cut into 1-inch slices
  • ½ cup diced canned clams
  • 1 cup (about ½ pound) uncooked cocktail shrimp in the shell
  1. Preheat oven to 375°F.

  2. Combine everything except mussels and put in a 9″ × 13″ shallow baking dish. Cover with foil and bake 20 minutes.

  3. Arrange mussels on top and return to the oven uncovered for 15 minutes.
