Basic Polenta

Polenta is a classic Italian dish that has withstood the ages, perhaps because it is so versatile. You can serve warm polenta with almost any vegetable or sauce, mix it with freshly grated Parmesan cheese, or simply serve it plain as a creamy and satisfying side dish.

INGREDIENTS | SERVES 4

  • 4 cups water
  • 1 cup coarse cornmeal
  • 1 teaspoon salt
  • 2 tablespoons butter
  1. Put water and salt in a medium-sized saucepan and bring to a boil.

  2. Turn heat down to medium-low. Gradually add cornmeal, stirring constantly, until it has thickened; about 15 minutes. Polenta should be thick without becoming stiff, and should have large bubbles rising and popping on the surface.

  3. Stir in butter.

  4. Serve immediately for soft polenta, or pour into a greased 9″ × 13″ baking dish and allow to cool. When cool it can be sliced and grilled, fried or baked.
