City Chicken is not chicken at all, but chunks of veal or pork (or both) on a wooden skewer. It resembles a chicken leg, but is less messy to eat.
INGREDIENTS | SERVES 4
- 1 pound pork, cubed
- 1 pound veal, cubed
- salt and pepper
- 8 wooden skewers, presoaked in water
- vegetable oil
Season meat cubes with salt and pepper.
Thread meat cubes onto skewers, alternating veal and pork.
Brush meat with oil, and then grill, broil, or bake until done. If you choose to bake the meat, bake at 350°F for 20 minutes. To grill, grill for 12 minutes. To broil, broil for 8 minutes.
