Oven-Fried Chicken Nuggets

These nuggets are not deep-fried but baked in the oven instead. They are still crunchy, and less oily. Serve these with dipping sauces such as honey, BBQ Sauce, honey mustard, Buttermilk (Ranch) Dressing, and ketchup.

INGREDIENTS | SERVES 4

  • 8 tablespoons butter, melted
  • 2 tablespoons Dijon mustard
  • 3 cups dry bread crumbs
  • 1 cup Parmesan cheese
  • 1 tablespoon onion powder
  • 2 teaspoons paprika
  • 2 teaspoons salt
  • 1 teaspoon pepper
  • 3 boneless, skinless chicken breasts, cut in chunks
  1. Preheat oven to 350°F. Line a baking sheet with foil and set aside.

  2. Melt butter and mix it with the mustard. Set aside.

  3. Combine bread crumbs, Parmesan cheese, onion powder, paprika, salt, and pepper in a bowl. Set aside.

  4. Toss chicken chunks in the butter mixture; then roll them around in the crumb mixture.

  5. Arrange the coated chicken chunks on the foil and bake for 1 hour.

  6. Serve warm or at room temperature.

Dipping Sauce

To make a quick dipping sauce for chicken nuggets, mix equal parts of honey, Dijon mustard, and barbecue sauce together. Add a squeeze of ketchup for dipping French fries.
