Hobo Stew
This campfire classic is revised for the oven. This recipe is easy for kids to help with — they can assemble the mixture and an adult can transfer the stew in and out of the oven. The “stew” is more like an individual meatloaf with vegetables steamed together.
INGREDIENTS | SERVES 4
- 1 pound ground beef
- ¾ cup dry bread crumbs
- 2 tablespoons Worcestershire sauce
- 1 tablespoon ketchup
- 1 tablespoon Dijon mustard
- 1 teaspoon onion powder
- ¼ cup Parmesan cheese
- ½ teaspoon salt
- ½ teaspoon pepper
- 1 cup peeled potatoes, large dice
- ½ cup sliced onion
- ½ cup sliced carrot
- 1 egg, beaten
Preheat oven to 350°F. Tear off 4 large squares of heavy-duty aluminum foil. Set aside.
In a bowl, combine the ground beef, bread crumbs, Worcestershire sauce, ketchup, mustard, onion powder, cheese, egg, salt, and pepper with your hands. Form the meat mixture into 4 oblong patties.
Set one patty on each foil square. Divide potatoes, onions, and carrots into four servings. Place one serving on top of each meat patty. Sprinkle the vegetables with salt and pepper.
Wrap each foil square up around the meat and vegetables into a tightly sealed packet.
Place the packets on a baking sheet. Bake for 45 minutes. Remove packets from the oven and carefully open them, avoiding the steam that will be released.
Campfire Cuisine
The hobo stew can be cooked over a campfire instead of in the oven. In fact, that is how it was originally made!
