Hamburger Macaroni

This concoction becomes cheeseburger macaroni if you add chunks of American cheese to it at the end. It becomes “goulash” if you add Tomato Sauce. Kids, young and old, love it!

INGREDIENTS | SERVES 6

  • 1 pound ground beef
  • ½ cup diced onion
  • ¼ cup diced celery
  • ¼ cup diced carrots
  • 1 teaspoon minced garlic
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 16 ounces elbow macaroni, cooked and drained
  • 1 tablespoon chopped fresh parsley
  1. In a large pot, brown the ground beef. Drain and discard the fat. Set aside the cooked meat.

  2. In the same pot, sauté the onions, celery, carrots, and garlic in the olive oil until the onions and celery are translucent.

  3. Add the ground beef back to the pot; season with salt and pepper.

  4. Add the cooked macaroni to the pot. Stir over low heat to evenly heat the mixture.

  5. Stir in the parsley, adjust seasoning with salt and pepper, and remove from heat.
