Citrus Vinaigrette

Any citrus juice can be used in this, but remember that orange is sweet, grapefruit is bitter, lemon is sour, and lime is tart. This recipe uses a combination of citrus juices.

INGREDIENTS | SERVES 8

  • 2 tablespoons orange juice
  • 1 teaspoon lemon juice
  • 1 teaspoon lime juice
  • 1 tablespoon chopped shallots
  • 1 cup olive oil
  • salt and pepper to taste
  1. Combine juices and shallots in a bowl.

  2. Drizzle oil in while whisking.

  3. Season with salt and pepper.

Vinegars

Experiment with different vinegars and citrus juices to create dressings with unique personalities to complement the ingredients of your salad. Some different acids include champagne vinegar, red wine vinegar, white wine vinegar, rice vinegar, cider vinegar, tarragon vinegar, blueberry vinegar, raspberry vinegar, sherry vinegar, balsamic vinegar, lemon juice, lime juice, grapefruit juice, and orange juice.
