Caramel Sauce

Homemade caramel sauce is far superior to the bottled version. This recipe can be embellished with coffee, brandy, or orange liqueur, added at the very end of the cooking process.

INGREDIENTS | YIELDS 3 cups

  • 1½ cups sugar
  • ½ cup water
  • 1 cup heavy cream
  1. Dissolve the sugar in water in a saucepan.

  2. Without stirring, cook the sugar/water mixture over medium heat until it caramelizes to a golden brown color.

  3. Carefully pour in cream (it will splatter) and heat to dissolve any coagulated caramel. Cook and stir until slightly thickened. Remove from heat; cool at room temperature. Thicken more as it cools.

Coffee Caramel

Substitute coffee for the water in the Caramel Sauce recipe for a mellow flavor change. You could also add Kahlua at the end of the cooking time for a kick at the end.
