Haloumi with Oregano

Serve this as a hot side dish to barbecued chicken, steak, or fish.

INGREDIENTS | SERVES 6 to 8

  • 1 tablespoon dry oregano
  • 8 to 10 ounce package Haloumi cheese, sliced into ¼-inch strips
  • Good-quality extra-virgin olive oil (preferably Greek)
  • Lemon wedges
  1. Rub dry oregano in your fingers and lightly sprinkle on each slice of Haloumi. Drizzle olive oil over each slice.

  2. Grill over a barbecue or fry in a skillet until cheese is slightly toasted. Squeeze lemon juice over the top and serve immediately.

Haloumi

Haloumi is from Cyprus and is usually made from a combination of sheep's and goat's milk. The curd is boiled and folded, and often some mint is incorporated at the same time. Because it won't melt and fall apart, it's the ideal cheese for the grill.
